Description
A blend of local grapes from Extremadura – Cayetana and Pardina. Certified organic with some biodynamic principles – grown over clay soils at 550m elevation. One month maceration, fermentation with indigenous yeast in cement tanks, followed by around 3 months further aging in concrete deposits. Bottled unfined, unfiltered, and a tiny bit of SO2 at bottling..
