This layered and complex spirit is crafted from tiny, hand-selected lots procured from Tennessee, with each barrel chosen by Dave for its unique character. Aged for a minimum of three years in new charred American oak, the whiskey undergoes a distinctive finishing process in wine barrels from Dave’s Grenache project in Maury, France. This final step imparts subtle fruit and floral notes that elevate the spicy rye foundation. The mature spirit is then brought to a perfect 90 proof with pristine water from Dave’s high-elevation property in Northern California, resulting in a remarkably smooth and intriguing whiskey.
